Russian Red is a Rocambole Garlic with a rich, musky, garlicy flavor and is very hot when eaten raw. When cooked into a dish, there will be no mistaking the presents of garlic, but it will not be overpowering since cooking takes some taste out, but leaves all the aroma. These garlic grow very large in the cold Alberta climate, but their shorter shelf life means they need to be grown with other varieties to provide year round garlic at it's peak. This variety will produce 5-8 cloves in a bulb.
Seed grade garlic has 20-30 cloves per pound for this variety, which leads to large garlic bulbs at harvest time.
Large-Mediums and Rounds are those bulbs that do not have the largest cloves. This includes a wide range of sizes, with the smaller ones typically having better storage.
